I changed my recipe for caramel rolls a bit. I haven't eaten these ones yet so I dont know how they will turn out but here's the new recipe:

Combine:
1 1/2c white rice flour
1/2c Almond meal
1 tbs xanthan gum
3 tbs active dry yeast

Heat and stir:
1c Milk
1/2c sugar
1/2c butter

Add to flour mixture along with 2 eggs.

Beat with electric mixer on high for 3 minutes.

Add 1 1/2c white rice flour

Turn out onto lightly floured surface. Push/roll out into rectangular shape.

Thread cut into about 12 rolls.

Spread bottom of 9x13 pan with caramel mix.

Caramel

Mix:
1/2c melted butter
1c brown sugar

Lay rolls into pan. Let rise 1 hour.

Cook at 350 for 35min.

Cheesy Dumpling
Mix till slightly sticky:
2c white rice flour
1c coconut flour
1c Almond meal
1 tsp Xanthan gum
2 eggs
1/2 tsp salt
1/3c water
1 tsp vegetable oil or lard
1/2c shredded cheese (I used a cheddar, mozzarella mix)

Roll into little 1/2-1 inch balls.

Put in pot of boiling water about 7-15 at a time cook till they float. Then spoon them out and enjoy!

Can be eaten with sauce, in a soup, or just plain.

Oregano Dumplings
Mix:
1c Millet flour

1/2 tsp salt

1/3c water
1 tsp vegetable oil or lard

Mix together:

2 tsp baking soda
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp cloves
1/2 tsp ginger

Add:
3c buttermilk
1/2 c butter (softened)
1/2c Shortening
1 tsp Vanilla
6 eggs

Beat on low till dry and liquid are mixed. Then beat at high speed for 2 minutes.

Put in 2 9x13 greased baking pans. Cook at 375 degrees for 35-40 minutes. When its about halfway done add topping.

Topping:

Mix:
1/4c brown rice flour
2c brown sugar
1/2c butter

Chocolate upside-down cake
makes 16 servings
Batter:
2c white rice flour
1/3c Almond meal
1 1/3 sugar
1tbs baking powder
1/3c coco powder
mix together then add:
1 1/3c milk
1/2c butter (softened)
2 eggs
1tsp vanilla
set aside.

Melt 4tbs butter in two 9x1 1/2-inch round baking pan.
stir into each pan:
1/3c butter
1tsp vanilla
1tbs water

Sprinkle bottom of pan with chocolate chips, then pour batter into pan.
cook time: 35-45min. at 350.

Carmel Rolls
makes aprox. 12

Combine:
1 1/2c white rice flour
1/2c Almond meal
1 tbs xanthan gum
3 tbs active dry yeast

Heat and stir:
1c Milk
1/2c sugar
1/2c butter

Add to flour mixture along with 2 eggs.

Beat with electric mixer on high for 3 minutes.

Add 1 1/2c white rice flour

Turn out onto lightly floured surface. Push/roll out into rectangular shape.

Sprinkle lightly with brown sugar and cinnamon.

Roll up so its a big long spiral log :)

Get some thread and put around it about a half inch in and pull to cut a piece, repeat till all are done.

Spray 9 by 13 pan and lay the rolls in it. Put in cool dark place and let rise about an hour and a half.

While rising prepare your caramel sauce.

Melt:
1 1/2c butter
2c sugar -brown will give more flavor but it doesn't matter-
1 tsp vanilla
1 tsp cinnamon

Once the rising is done drizzle the caramel over the top.

Cook for 35min, then Enjoy!
