Cheesy Dumpling
Mix till slightly sticky:
2c white rice flour1c coconut flour1c Almond meal1 tsp Xanthan gum2 eggs1/2 tsp salt1/3c water1 tsp vegetable oil or lard1/2c shredded cheese (I used a cheddar, mozzarella mix)
Roll into little 1/2-1 inch balls.
Put in pot of boiling water about 7-15 at a time cook till they float. Then spoon them out and enjoy!
Can be eaten with sauce, in a soup, or just plain.
